If your Mac is running macOS Big Sur 11.0 or higher, you can use the Preview application to redact information from a PDF. Open the PDF in Preview, go to Tools, then click Redact. A warning will appear, click OK. Double click and highlight the information you want to redact. Save the file, and upon reopening, the information will be permanently redacted.
