You can change the created date on a PDF using the Remove Properties tool. Right-click on your PDF and choose Properties. Open the Details tab and select the Remove Properties and Personal Information link. Choose the option for Create a copy with all possible properties removed and select OK.
On Windows, just follow these steps: Right-click your PDF. Select Properties. Choose Read-only. Click OK.

Open the PDF document that you want to edit in . Click on the White Out tool in the toolbar on the left side of the screen. Position your cursor over the area of the document that you want to white out. Click and drag your cursor to select the area that you want to white out.
Open the PDF file you want to edit in Acrobat. Click on the Edit PDF tool on the right-hand side of the screen. Select a text block and make changes in the PDF or erase words using your keyboard. Erase entire text blocks by clicking Delete when the block is highlighted.
If you go to the document properties of a PDF file (control or command d), if the proper metadata is available, it will list the creation date and time and modified date and time. This can help you determine if a pdf file has been modified since creation. However, it is not foolproof. This metadata is not secured.
Select the specific text and images you want to white out. Under the redaction tool properties, change the Redacted Area Fill Color to white. Click OK to approve changes. Save the PDF.
If you need to hide any information on the document, go to the Protect tab, select the necessary text, and click on Apply Redaction. This will hide data if you share PDF documents externally.
