In Mac OS Mojave's Preview app, it is easy to split PDFs into separate documents and merge PDFs into one document. To split a PDF with four pages, access the left sidebar and click on Thumbnails. You can then select and delete pages to create separate PDFs, such as removing the third and fourth pages to have the first two pages in one document. This process can be undone using Command Z.
