If you sync messages with iCloud, the attachments are gone when you delete them. If you backup messages with either iCloud or iTunes, restore the backup if the messages are in the backup. The backup would have to have been made before you deleted the attachment.
In iOS or iPadOS, you can find conversations that contain the proportionately largest collection of attachments. Go to Settings account name iCloud Manage Storage Messages Top Conversations. There you see a list by descending order of storage consumed of all your Messages conversations.
