Read-Only means the contact is stored on another device and is being synced to the iPhone. You cannot delete Read-Only contacts from the contact card.
Open the Messages app. Tap the profile icon on the right side of the search bar. Go to Messages settings Chat features. Switch the Enable chat features toggle off.
