If your Mac is running macOS Big Sur 11.0 or higher, you can use the Preview application to redact information from a PDF on your Mac. Open the PDF you want to redact in Preview, navigate to Tools, and click on Redact. A warning will appear saying redacted content is permanently removed, press ok. Double click and highlight over the information you want to redact. Save the file, and when you reopen it, you will see the information has been permanently redacted.
