Gary from MacMost.com explains that editing a PDF on Mac is not done directly in the PDF itself, but in the source document. When opening a PDF in Preview, you can highlight, annotate, export, and rearrange pages, but not edit the content. These actions fall under the realm of Markup, rather than true editing capabilities.
