As many as you like. There is no limit to the number of pages you can include in a merged PDF document, and similarly no limit to the size of the PDFs you work with.
If your PDF files are secured, youll need to know their passwords. If you try to combine files which are secured (password protected) in docHub for example, you will be asked for the permission password when you click on the Combine PDF files button.
If your PDF files are password protected, remove the passwords by changing the security settings in File properties. Go to the File tab and select Combine. Add the PDF files you want to combine and then click OK. The new document will be formed and open as another tab which you can save.

Just an FYI: Sometimes its not possible to combine files as a single PDF and using a Portfolio is the only option. For example, if one of the files is secured or digitally signed.
