If you go to the custom field and edit it, you should be able to uncheck that option. Then you can remove it from your page layouts or delete it all together.
Enable the Auto-Complete option Choose Edit Preferences (Windows) or Acrobat / Acrobat Reader Preferences (Mac OS). Select Forms on the left. Under Auto-Complete, choose Basic or Advanced from the menu. Select Remember Numerical Data if you want the Auto-Complete memory to store numbers that you type into forms.

One way to make disable the field is goto preview of the iView in Content Administration. CtrlShiftRight click in that preview. Here you can find the options to disable or invisible etc for each field.

How to add passwords and permissions to PDF files: Open a file in Acrobat and choose Tools Protect. Select whether you want to restrict editing with a password or encrypt the file with a certificate or password. Set password or security method as desired. Click OK and then click Save.
In order to remove these fields, you need to open the file in Acrobat and choose prepare form mode under Tools and remove fields at these spots.
