In Outlook, you can type email messages in three different formats: HTML, rich text, or plain text. The default format is HTML, but it can be changed by clicking on File, then Options, then Mail. Compose messages in this format, with HTML as the default, but you can change it by clicking on the down arrow next to HTML and selecting either rich text or plain text.
