To insert the copyright symbol in a Google Docs file using an Alt keyboard shortcut: Position the cursor in the document where you want to insert the copyright symbol. Press Alt + 0169 on the numeric keypad.
Press the share button in the upper right corner. Docs is blue but looks like this one. Then in that menu you can add people using their Google account email addresses (shown in step two) and make sure you choose "Can Edit" from the drop down box with the pencil and then hit Done.
If you're referring to Google Docs (not Sheets), open Docs on your computer (not your mobile device). Go to Tools > Preferences > Substitutions. Look for the copyright symbol in the "with" column (on the right). When you find it, click the X on the far right to remove it from your Preferences.
