In the Ubuntu user interface, this is pretty easy: you just have to select all the files you want to unzip, right-click on them and use the Extract option to unzip them all.

Open your file manager and go to the preferences section. There should be an option to select with double and single clicks. Set it to single click. Preferences should be in the Edit menu list.
