In thermodynamics, working substance is the term used by French physicist Sadi Carnot in 1824 to define any generalized body, such as a body of water, a metallic bar, an aeriform fluid, etc., that may be configured to do work when put in alternating contact with hot and cold bodies able to supply or absorb heat.
At any particular temperature, we define the standard state of any liquid or solid substance to be the most stable form of that substance at a pressure of one bar. For example, for water at 10 C, the standard state is ice at a pressure of one bar; at +10 C, it is liquid water at a pressure of one bar.
