A tack is made into the wind, swinging to put the wind on the opposite side from which it was, i.e., from a port tack to a starboard tack. A jibe is used when the wind has been blowing from aft, say from the port quarter to the starboard quarter.
Generally, a boat is on a starboard tack if the wind is coming over the starboard (right) side of boat with sails on port (left) side. Similarly, a boat is on a port tack if the wind is coming over the port (left) side of boat.
Apparently the rigid rule that we must mount from the left came later when cavalry officers wore a sword on the left, and it was safer to swing the right leg over the horse.
Generally, you saddle from the left or near side, but your horse should accept saddling from either side. Stand slightly behind the shoulder of the horse and place the saddle pad or blanket, with the fold facing front, just behind the horses shoulder blades, partially covering the withers.
Why is that? The short answer is because most riders mount on the left, it is easier and more efficient to tack up on the same side. The same applies to dismounting and untacking. However, we recommend tacking up from both sides of your horses body to keep yourself, your horse and your training balanced.

Tack, in a strict definition, refers to the leather equipment, such as saddles and bridles that are used in equine activities. More commonly, the word tack is used to refer to any and all equipment, leather or not, that is used with horses.
