Now there are ways to do that specifically with Pages, Numbers, and Keynote documents. Even word documents and such. But if you just wanted to put a bunch of files in a folder and then password protect it there are two ways that you can do. One way is to use Disk Utility and create a Mac disk image and encrypt that. Another way to do it is to create a Zip file using the Terminal with a password.
