It depends on your mail service provider. Most providers dont allow you to alter your account name, but some will give you the option of creating an alias to your existing mailbox. The @me.com cannot be changed, but you can create a new alias of the email address you would prefer. This address will be an @icloud.com address. Then go to composing tab. Set default address to the new alias you created.
If your accounts email address ends in @gmail.com, you usually cant change it. If youre using a Google Account through your work, school, or other group, ask your administrator for help.
