Open the Find Replace window and put a checkmark in Use regular expressions. In the Find box enter a pattern like \b(Apple|Banana|Orange)\b where the words between the parentheses are the words you want to exclude, capitalized as they are in your doc. At the very bottom you can check a box to include footnotes and endnotes in the word count. If you dont want to include footnotes and endnotes in your word count then leave the box unchecked (or uncheck it).
Citations within the text are usually included in your assignment word count. So quotations, references, footnotes, etc. would all be counted. The bibliography or reference list, however, is usually not included in the word count.
This can be disabled by simply clicking on the word count itself, and unchecking the option to include textboxes, footnotes and endnotes. The option to exclude these types of text from the word count in Word should be communicated to students as necessary, depending on the assessment context.
