An inspection mark on the label lets you know the meat or poultry product has been inspected and that it is safe, wholesome, and correctly labeled. See FSIS Inspection Programs.
The USDA grade shield, along with the USDAs Food Safety and Inspection Services (FSIS) seal of inspection, assure you that not only is the product safe and wholesome, but of the best quality available in the marketplace.
Once a carcass has been evaluated, the USDA grader stamps the carcass with the quality grade and yield grade. The stamps are generally placed on the short loin of the carcass. Stamps let the grade chain operator know how to group the carcasses in the cooler.
The inspection and grading of meat and poultry are two separate programs within the United States Department of Agriculture. Inspection for wholesomeness is mandatory and is paid for out of tax dollars. Grading for quality is voluntary, and the service is requested and paid for by meat and poultry producers/processors.
