This means all data on the drive is permanently and instantly unreadable, as needed.
While erasing completely deletes all of your data on the given partitions or disks, wiping only deletes only those spaces and files on the hard drive that are of no use to the OS nor you.

Secure Erase and HP Disk Sanitizer are tools used to permanently remove data from a hard drive or solid-state drive. The deleted information cannot be recovered. Secure Erase: Works on solid-state drives and hard drives. HP Disk Sanitizer: Works only on hard drives.
Data wiping is the process of eliminating all of the data stored on a hard drive or other data storage device. Under normal circumstances, data that is deleted isnt actually gone for good. Instead, all the pointers and indexes that reference that file are simply removed.
Overwrite the entire disk area with zeros first, then 0xff, random numbers, and finally write verification. This method is the most adopted by domestic companies and government offices.
The process involves overwriting the entire drive with random data or zeroes, making the original data effectively unrecoverable. This is why its crucial to have proper backups before performing a secure erase, as there is no practical way to retrieve the data once it has been securely erased.
