The parties must usually mutually agree to alter or modify the contract. In some circumstances the underlying contract might give one party a unilateral right to make certain limited changes, but agreement is normally necessary. The parties must intend the alteration/modification permanently to affect their rights.
An amendment is typically used to change something thats part of an original contract.
An agency agreement details the terms of the agency, such as what the agent can do and the amount of money paid for the agents work. The contract also gives the agent the authority the principal determines, such as the exclusive right to act on her behalf.

Contract variation is what happens when parties decide to perform part of a contract differently from the way theyd originally agreed in the document. Varying a contract allows legal and business teams to change certain terms or obligations later down the line, without needing to scrap or redraft the entire contract.
As a general rule, in order to vary a contract, both parties need to agree to this prior to the changes taking effect, preferably in writing. Unilateral variation (ie where only one party can make a change) is only valid under specific circumstances if this has been agreed in advance.
There are three main ways to vary the clauses, examples of which are given above. These are (1) including additional wording, (2) including an entirely new clause and (3) deleting a clause. The above can be repeated for as many clauses as need to be varied.
