When you save a file in TIFF format from Photoshop, you get several options for compression. You can choose from no compression (uncompressed), LZW compression, or ZIP compression. ZIP compression is a newer option.
The detailed image quality stored within a TIFF means theyre ideal for scanned images and high-resolution documents. You might find them a useful choice for storing high-resolution images of your artwork or personal documents.
A tiff is an image (tagged image file format), and can only be edited using an image editing application like Photoshop. This will be true of any image format you produce from a scanner. To translate the tiiff back to text you would need optical character reading (OCR) software.

ZIP vs LZW in Practice: For 8-bit TIFF files, both LZW and ZIP offer similar compression. For 16-bit TIFF files, ZIP is recommended as LZW can increase file size.
