Use the Undo Icon At the bottom of an open note, tap the pen icon to open Markup, where youll find two arrow icons at the top of the screen. Tap the arrow pointing left to undo the last change.

I use SimpleNote a lot on both a laptop and Android phone. On a laptop if you accidently delete part of a note you can simply press CTRL Z to undo.
Undo the last action: Choose Edit Undo (from the Edit menu at the top of your screen), or press Command-Z on your keyboard. Redo the last action you undid: Choose Edit Redo, or press Shift-Command-Z.
Step 1: While in notes, press Command Z (for Mac users) or Ctrl Z (for Windows users) on your keyboard to undo the last action. Step 2: Repeat pressing the keys to undo previous actions.
