Reversing the polarity can lead to overheating, short circuits, and damage to the electrical components or devices involved.
Typically, home wiring doesnt generate any noise because proper connections dont leave space for extra currents to escape. However, when a fixture is hooked up incorrectly or the wires are damaged in some way, you may hear a buzzing or humming sound as the electricity moves between the light and the wall.
Your light would still work if wired backwards, but there is a shock hazard as the shell of each light socket in the fixture would be wired to the hot lead and it should be wired to the neutral. Your circuit breaker would not blow and there would be no indication of the wiring error.

Use a rag to catch any overspray or drips. An inexpensive non-contact voltage tester will verify that the power to the fixture is actually off.
