Usually, the values fall between 100 and 900, where 100 represents the lightest and 900 is the boldest. In your instance, the texts thickness or boldness accounts for the difference between font weight: 500 and font weight: 700. Font weight: 500 is regarded as being in the medium or regular range.
From what I understand, value 500 is the normal font weight, and value 700 is the default font weight for bold. However, when I put 599, it did not change the font-weight at all. But when I put 600, it jump to the default font weight of bold. Same results from value 600-900.

Weight is the overall thickness of a typefaces stroke in any given font. The most common weights are regular and bold, but weights can cover extremes from the very light to the very heavy. With the weight axis in variable fonts, that number is effectively unlimited.
Font-weight defines the thinness or thickness of a font. The ranges are 100 to 900. Normal font is 400. 700 is bold. So 900 would be an extra bold and a 100 would be an extra light.
Meaning of relative weights Note that when using relative weights, only four font weights are considered thin (100), normal (400), bold (700), and heavy (900). If a font family has more weights available, they are ignored for the purposes of relative weight calculation.
