Answer: Acts 8:37 is not included in many Bible translations because it is not found in the oldest and best translations of Acts. There is no attempt to cover it up, as you can find it (with an explanation) in the footnotes of most Bibles.
Matthew 17:21 Reason: The verse closely resembles Mark 9:29, but it is lacking in Matthew in א (original handwriting), B, , some Italic, Syriac, Coptic and Ethiopic manuscripts. It is, however, found in this place in some Greek mss not quite so ancient C, D, K, L as well as some other mss of the ancient versions.
In 2011, an updated version of the NIV was released, with both the 1984 version and the TNIV being discontinued. The update modified and dropped some of the gender-neutral language compared to TNIV, which included going back to using mankind and man, rather than human beings and people.
Some are older, written closer to when the original author wrote the Biblical text. The differences you find, or the missing verses, are simply the result of using different manuscripts. So, there is nothing nefarious going on with the NIV.

Let me repeat that: There are NO missing verses in the NIV. Unfortunately the authors of the NIV decided to remove certain verses from the main Biblical text because the oldest and most reliable manuscripts do not have them. But all the verses that have been taken out are found in the footnotes.
One of the biggest criticisms of the 1984 NIV was that sometimes words in the Greek text simply were not translated. The most notorious example was the Gospel of Mark, which makes frequent use of the Greek word euthus, immediately. For some reason, there were many verses in the 1984 NIV that simply ignored this word.
