You cannot build a raster attribute table for a raster dataset that is a pixel type of 32-bit floating point. You can generate an attribute table for a multidimensional dataset.
An existing raster or vector layer can be used as the clip extent. If you are using a feature class as the output extent, you can clip the raster by the minimum bounding rectangle of the feature class or by the polygon geometry of the features.
You can define the area by uploading a vector file (you can also choose the specific layer in multilayer files) or by drawing the area on a map. Then you have to select the type of shape the data should be clipped - either Geometry (exact shape), Bounding box (extent) or Convex hull.
Each raster dataset in a raster catalog can have its own attribute table. The method of storage is simple and easy to manage; however, you could end up with many tables in the database, some of which may be identical (for example, if raster datasets in the catalog have the same attributes).
The GeoTiff format does not have the concept of attribute tables. The closest thing to it using a GeoTiff file is to store the data in image palette format where you have an index integer value stored in the Tiff and that indexes into a 256 entry colour table.
