S-Logs are gamma curves developed by Sony to preserve more of the information captured by image sensors. Because video shot this way will be color graded, you will set a combination of gamma curve and gamut (specifically, an S-Gamut), with broader gamuts enabling you to retain more image information.
Log can be a great tool if you know you will have time to edit your footage in post-production. It will help you get more detail in poor or uneven lighting.
When shooting in S-Log, use Picture Profile presets PP7, PP8, or PP9. The PP7 preset combines S-Gamut and S-Log2, while PP8 is S-Gamut3. cine/S-Log3 and PP9 is S-Gamut3/S-Log3. S-Log is a gamma curve with a wide dynamic range optimized under the assumption that grading will be performed in the post-production process. S-Log3 allows for better reproducing gradation characteristics in shadows and the mid-tone range than S-Log2. It has features closer to those of scanned film. The wide tone area captured by S-Log makes it especially effective when shooting subjects which tend to experience loss of details in shadows or overblown highlights. Scenes which were impossible to shoot before, such as those with strong sunlight and dark shadows can be captured in far more detail.
S-Log captures far more information than standard REC. 709 footage can record, giving you more control over the finished image in post-production. Instead of exposing for highlights or shadows when shooting, you can capture all of this information and choose how you want to display it later. LOG is a specific video format processed in the camera, unlike RAW, which is totally unprocessed. LOG footage can be viewed on an external monitor without conversion. And, because its a video format, certain components such as white balance and exposure are made part of the video. Because log is primarily designed to maximize dynamic range, it makes sense to shoot log in tricky lighting conditions where you expect there to be both extremely bright and dark parts in the image.
