Normal video footage is shot in the REC. 709 color gamut, but material recorded in S-Log is recorded in the much wider S-Gamut color space. Put simply, the wider the color gamut, the more color information can be recorded and the more vibrant and realistic your images will look.
709 Color Gamut. Rec. 709 is a color gamut developed by the ITU Radiocommunication Sector (ITU-R) that acts as a standard used by much of the high-definition display and projector industry to ensure that all the devices on the market that adopt it as their standard are on the same page in terms of color. S-Log is a gamma curve with a wide dynamic range optimized under the assumption that grading will be performed in the post-production process. S-Log3 allows for better reproducing gradation characteristics in shadows and the mid-tone range than S-Log2. As expected, Rec709 footage has a more dynamic range of colors and contrast but less flexibility in post-processing as its already baked some colors into the image, but Log gives you more room for color alteration. If youre shooting in jpeg only, or JPEG + RAW, your camera will give you a choice of color space for the JPEGs. Id recommend using docHubRGB there. But again, if youre shooting RAW only, then you dont need to worry about any of the color space settings in your camera, they wont have any effect.
Higher image quality translates into more available data when it comes to photo editing, giving RAWs a definitive edge over JPEGs. Editing programs like docHub Camera RAW, Bridge, or Lightroom are built for fine-tuning RAWs into polished final photos.

S-Log3 allows for better reproduction of gradation characteristics in shadows and the mid-tone range than S-Log2. It has characteristics closer to those of scanned film. S-Log3 is recommended in general. If S-Log3 does not offer sufficient gradation in the mid- to high-luminance range, try S-Log2.
