If by mail, then everything should go by mail. Generally speaking, most students reading this will have their recommenders submit their letters online.
Academic rank varies by country. But I would expect in most places a letter written by a postdoc would be considered. Selecting letter writers is often a compromise between getting a letter writer who is highly ranked and well known and getting a letter writer who is well informed.
Some word processors or PDF editors will also allow you to digitally sign and associate this with some form of cryptographic signature. In short: sign your letter, but do it the easy and electronic way if you can.

Click on the box to select the Teacher or Other Recommender you want to assign. Click on the Assign button to assign that recommender.
If a face-to-face conversation isnt an option, you can always ask for a letter of recommendation via email. Scheduling a time to meet ensures that the person has time to devote to you, and it allows you to explain why youve selected them as the best person to write the letter.
Students generally dont submit their own letters of recommendation. Teachers, counselors and other recommenders usually send them in electronically via whichever application platform a student is using, such as the Common App.
Including your full name in the letter will help ensure that it is added promptly to your application file. Letters may be submitted by mail or in person. Recommenders may also email their letters to the appropriate school counselor.
The Standard for Recommendation Letters Traditionally, programs require that faculty submit recommendation letters independently of students or only pass them along to students in sealed, signed envelopes.
