The day before you plan to cook the brisket, apply a generous amount of brisket rub on all sides of meat and refrigerate overnight. The rub will not only enhance the flavor of the meat, but tenderize it as well. Similar to rubs, the meat should soak overnight in the marinade for maximum flavor absorption.
The go-to rub is simply a blend of kosher salt and 16-mesh ground black pepper. For Texas-style smoked brisket, combine these two in equal amounts in a shaker that has a lid to allow course grains to evenly flow through it.
How Long Should a Dry Rub Sit on a Brisket. While you can technically cook a brisket right after you apply the rub, we recommend letting the rub sit on the meat for up to 24 hours so the flavors are really absorbed into the meat.
Hitting your brisket with the right level of heat is critical. For example, if youre cooking at 250F, hit it with 350F to start. For the first 20 minutes, youll want to use a higher temperature to sear the brisket and brown the outer layer, which will help contain its juiciness.
Dont wrap the ribs in cling film when using a dry rub overnight. If you do, the water from the meat will undo your efforts and everything you are trying to achieve by using a dry rub.
Experiment with different spice blends to create your own signature barbecue rub, or keep things simple like Texas pitmaster Aaron Franklin, who only uses coarse salt and black pepper, sometimes with a little paprika for color.
