You can run the Document Inspector on the document (File Info Check for Issues Document Inspector) and choose to remove document properties and personal information.
Delete a date and time field Open the table in Datasheet View. Locate the Date/Time or Date/Time Extended field, right-click the header row (the name), and click Delete Field. Click Yes to confirm the deletion.

Select the Design tab. Click the Date Time option. Choose the desired format of the date from the menu that appears. Check the Update automatically box.
You can also use the Document Inspector if youd like the creation date to become todays date. This will give you the option to remove the Create Date, and all other private properties.
To edit the date, click the gray box, type a new date, and then click outside the box. To change the date back to the current date, click the date field and click Update. Note: If you manually change the date and then save and close your document, the next time the document is opened, Word will show the current date.
Click the row selector (the blank square) next to the Date/Time or Date/Time Extended field, and then press DELETE, or right-click the row selector and click Delete Rows. Click Yes to confirm the deletion.
