Open a file in Acrobat. Click on the Edit PDF tool in the right pane. Use Acrobat editing tools: Add new text, edit text, or update fonts using selections from the Format list.

If you go to the document properties of a PDF file (control or command d), if the proper metadata is available, it will list the creation date and time and modified date and time.
