It is not illegal to alter a contract once it has been signed. However, it must be materially changed, meaning that if an important part of the contract is altered by the change, it must be made by mutual consent of both parties.

If youve signed a contract to accept an offer of employment and subsequently change your mind you should provide notice as per the contract of employment.
A contract of employment is an agreement between you and your employer that outlines the rights and duties of both sides. At some stage your employer or you might want to change your contract of employment. However, neither you or your employer can change your employment contract without each others agreement.
However, in short, an employee can refuse to accept a change or variation in their contracts terms and conditions. The employee could also ask for a trial period, so they can work under their new terms and decide whether or not they are prepared to accept them.
Your employer should only make a change to your contract if at least one of these applies: you agree to the change. your contract says your employer can make certain changes - this is called a variation clause the law is changing - for example if you get the National Minimum Wage and the rate changes.
A contract amendment allows the parties to make a mutually agreed-upon change to an existing contract. An amendment can add to an existing contract, delete from it, or change parts of it. The original contract remains in place, only with some terms altered by way of the amendment.
One of the arrangements you can make in an employment contract is that as an employer you have the right to unilaterally change terms and conditions of employment. Without such a clause, you may not, in principle, change the employment contract without the employees consent.
