Always On Layout fields are fields that must be on the page layout and cannot be removed from the Page Layout. Following is the list of some standard objects and their associated fields that use Always On Layout. go to Field level security from that field in object and uncheck from that profile as shown below.
You can hide the Probability (%) field from Field-Level Security: Setup | Customize | Opportunity. Look for Probability (%) and click the field name. Click Set Field-Level Security button. Untick Visibility checkbox for profile do not want to see this field. Save and done.
Standard fields are default fields built-in to Salesforce. They can not be deleted.
Inorder to remove the standard field from view, Go to the fields which you want to hide and select there link and select the Set Field-Level Security button and uncheck the Visible checkbox for the profiles you do not want to see those particular fields.
Setup Customize Leads Page Layout Edit removes the fields from the Detail page layout.
Stage and Probability cannot be un-linked, this relationship is hard-coded. The Probability value is always updated by a change in the Stage value, even if Probability is marked as read only on the page layout. Users with access to edit this field can override the value.
Go to Setup | Object and Fields | Object Manager | Lead.In Classic: Go to Setup | Customize | Leads | Page Layouts. Click Edit next to the Page Layout name. Click on the wrench icon for the Company field. Deselect the Required checkbox and click OK. Save the Layout.
As users change the stage of an opportunity, the Probability fields are automatically changed to the values specified during setup. To update opportunity stages, go to: Classic: Setup | Customize | Opportunities | Fields, and select Edit next to the Stage field.
