In Photoshop CS4 or newer versions, make a copy of the original layer by pressing ctrl + J. Hide the original layer by clicking the eyeball. Use the rectangular marquee tool to draw around the signature, then go to image and click crop. Press ctrl + T to cancel the marching ants. With the copy layer selected, press control and click the Create a new layer button. Press D to make color sliders go to black, then select the paint bucket tool and click on the image to fill the under layer with black.
