You can use a UI policy or Client script to hide the variable, and make sure the Run scripts in UI type field is set to Mobile/Service Portal. In that case it will only run on service portal and not in the standard catalog view. Its the most simple way to achieve the solution you want.

You have to add necessary details and save it. after saving the form you will get UI Policy Action Tab where you need to add variable which you want to make read only.
To hide the standard change category on Service Portal, you need to hide all 3-4 catalog items from portal. Once the catalogs are hidden, it will automatically hide Software change category. As nothing will remain to display under Standard change, it will also be hidden automatically.
