The Preview app in Mac OS Mojave allows for easy splitting and merging of PDF documents. In a sample PDF with four pages, you can split it into two separate PDFs by deleting pages individually or by selecting multiple pages at once. This can be done by holding the Command key and clicking on the pages you want to delete. Additionally, you can undo changes by using Command Z.
