To separate names in Google Docs using SPLIT: Click in the cell where you want the first part of the name to appear. Type =SPLIT( and select the cell containing the name. Type a comma, followed by a space in quotes, and then a closed bracket. Press Enteryour name will appear separated.
Google Sheets has an inbuilt function called SPLIT that allows you to instantly split the text based on a delimiter. In the case of names, the delimiter is a space character.
Its not possible to hide the owner name on shared documents. It could be found either on the Google Documents UI or on Google Drive. The alternative is to use an account that doesnt include your name on the email address nor the display name.
