RAW photography is very forgiving if you end up having to correct the light in an image. These files have a very high dynamic range, so they can capture a lot of lights and shadows. Having all of this data in the image will make it easier for you adjust over or underexposed images during editing.
Providing the RAW files could undermine their efforts and potentially reflect poorly on their work if the client decides to edit the files themselves. Another reason why a photographer may not want to give their clients RAW files is that it could damage their professional reputation.
As you might expect, the tradeoff for these detailed files is that RAW files are quite a bit larger than JPEG files. Still, most professional photographers shoot in RAW because it gives them more information to work with in the post-processing phase.
A RAW file is what the name suggests: raw, unprocessed data. It contains the image data exactly as captured on your camera sensor. Any white balance, Picture Style or other settings that you might have applied are only appended to the image file.
