Smart Art templates are built in XML and include rules on what happens when you move, add, resize etc. The user cannot access that XML so theres no way to turn off the autoformat.
Heres how to turn it off so that the text stays the same size. Click in the text box. Click the Text Box Tools Format tab, and then click Text Fit. Click Do Not AutoFit.
