Both in vitro and in vivo are most often used in scientific writing. Example: The cancer cells were grown in vitro in a controlled environment. The Chicago Manual of Style (CMOS) and the American Psychological Association suggest that common abbreviations need not be italicized.
CBE considers whether a Latin word is common and suggests that in vitro and in vivo not be italicized.
Hyphens between the two parts of each term are not usually required, but on occasions have been insisted upon by the illiberal of outlook. Although strictly in vitro and in vivo are adverbial phrases (and are only so used by cognoscenti) they are now often misused as adjectives.
Italicize such foreign words and phrases as terra incognita, in vivo, and inter alia; however, if the word or phrase is commonly used in your field (e.g., in situ, et al., ad hoc, ab initio), you may omit the italics.
Most publishers and style guides instruct authors not to use italics for such phrases. Both Springer and Elsevier, for example, insist on setting in vitro, in vivo, and in situ in normal, or Roman, font, and so does the Chicago Manual of Style and Scientific Style and Format.
Because Latin that has been commonly used in English for a long time is usually not in italics. Terms like etc. (or et cetera when spelled in full) and et al. dont need to be in italics. Other very common examples are: in vitro / in vivo / ex vivo
