In an envelope or template, you can set a property on any Text field to hide the field data. In your envelope or template, place a text field on your document. Select the text field to open the properties panel. Expand the Formatting section. Mark the formatting option Hide text with asterisks.

If you are using it on some record producer variable kindly use gform. setDisplay(variable name,false); . This syntax on the record producer hides the field and also saves the space of the field,so the next variable can come just in its place.
Use a gform method to enumerate the editable fields on a form, and then iterate through them, setting them as read-only.
