A role defines the privileges that a user or group will have for a specific set of models in Looker. You create a role by combining one permission set with one model set. A permission set defines what a user or group can do. You select a combination of permissions that you want to assign to a user or group.
To allow for the User to edit this Field, simply remove the Read Only Designation at the Page layout Level- leaving it Read only at the Field Level.
To edit multiple permission sets: Select the checkboxes next to the permission sets, then in the top bar click edit Edit. In the right panel, click Change next to any permission you want to update, then update the permission.
If there are field-level permissions in a profile, these will take effect as soon as you assign object-level permissions in a permission set. Thus, youll need to clear the objects FLS settings in the profile even if youve disabled all object-level permissions.

To limit access for a user or group of users, ensure that their base profile as well as any of their permission set limits this type of access.
From Setup, enter Permission Sets in the Quick Find box, then select Permission Sets, or enter Profiles in the Quick Find box, then select Profiles. Select a permission set or profile. Depending on which interface youre using, do one of the following: Specify the fields access level. Click Save.
From Setup, open Object Manager, and then in the Quick Find box, enter the name of the object containing the field. Select the object, and then click Fields Relationships. Select the field you want to modify. Click Set Field-Level Security. Specify the fields access level. Save your changes.
