While legally dates are not required, it is more beneficial to include them. If they are omitted, the other party may see it as an act of bad faith. A contract with dates will also help prove the validity of the contract if legal actions take place in the future.
A contract is void when both the parties are mistaken on the agreed matter. For example, you should shoot a wedding video for a client, but you could not on the agreed date because you are incredibly sick. It will be considered a common mistake that will make the contract void.
It is not illegal to alter a contract once it has been signed. However, it must be materially changed, meaning that if an important part of the contract is altered by the change, it must be made by mutual consent of both parties.
Hopefully, you have a signed contract that you utilized to start the photographer/client relationship. Thereby, it is best practice to end the relationship in writing. You can use a document entitled Mutual Release and Rescission of Contract or a document simply entitled Cancellation of Contract.
