A lot of times its beneficial to stain the wood first but you should also apply 1 coat of poly so the stain doesnt get damaged as you handle it. Finishing before assembly is really suited to spray finishing but can also work for hand applied finishes as well, depending on how many coats you apply and the curing time. Let water-based stains dry for two to three hours and oil-based stains for four to six hours before applying a polyurethane sealer. The best way to get a smooth finish is to apply the first coat of sealer, let it dry, and then lightly sand the surface with 220-grit sandpaper before applying a second coat.
