The big defining characteristic of LOG is its flat image profile. It looks this way because LOG retains a lot more color information than other footage types. So while LOG may not look pretty out of the box, it actually gives you much more flexibility when color correcting and color grading your footage. Normal video footage is shot in the REC. 709 color gamut, but material recorded in S-Log is recorded in the much wider S-Gamut color space. Put simply, the wider the color gamut, the more color information can be recorded and the more vibrant and realistic your images will look.
709 (roughly gamma 2.4) is optimized for viewing in a dim environment (television room in the evening), while sRGB (roughly gamma 2.2) was optimized for viewing in a slightly brighter environment (office building in the day).
