Hi Ryan, go to Customize - Activities - Task Fields. You can add and remove new picklist values to the Subject field on this page.
Adding a new field in Log a call ? Login into SFDC. GoTo Setup-Activities-Activity Custom Fields. Create new custom field(here its a picklist) by clicking on New Button. Once you create custom picklist fields than goto Setup - Activities - Task Page Layout.
Change picklist values on Log a Call field via Account Record Type - possible? for each record type define the picklist values that will appear under Subject. and then you will create new Actions for each type of task for the Account object under Buttons/Links/Actions.
