Per Keyboard shortcuts in Messages on Mac, you will need to press Option-Return or Shift-Return. You can find this information under the section labeled Conversations. It will say, Insert a line break or create a new paragraph in a message.
In the Format sidebar, click the Style button near the top, then click one of the default indent buttons in the Alignment section to increase or decrease the indent of an entire paragraph.
