During an allergic reaction, the immune system responds to a normally harmless substance as if it were a threat. In some people, common foods such as milk, eggs, and peanuts can trigger such a reaction. So how does this work? If you have a food allergy, your immune system makes a type of antibody called immunoglobulin E, or IgE. This class of antibody binds to immune cells called mast cells and basophils that circulate throughout your body. When you are exposed to the food allergen, it attaches to the IgE antibodies. This binding signals the immune cells to release histamine and other chemicals that cause allergy symptoms, such as swelling of the lips, hives, and shortness of breath. Because mast cells and basophils rapidly release these chemicals, an allergic reaction typically occurs within 30 minutes after exposure. Here are some way to reduce this cross-contact: Clean and sanitize with soap and water or all-purpose cleaning agents and sanitizers that meet state and local food safety regulations.
The name of the food source of a major food allergen must appear: In parentheses following the name of the ingredient. Immediately after or next to the list of ingredients in a contains statement. Example: Contains wheat, milk, and soy.
Many people with food allergies wonder whether their condition is permanent. There is no definitive answer. Allergies to milk, eggs, wheat and soy may disappear over time, while allergies to peanuts, tree nuts, fish and shellfish tend to be lifelong.
Wet cloths and wipes were more effective in allergen removal from surfaces than dry wipes. Prescraping food from surfaces prior to full cleaning aided allergen removal. Cloth storage in sanitizer solution minimized allergen transfer between surfaces. Allergens were difficult to remove from a textured plastic surface.
Use hot soapy water when cleaning food preparation equipment, such as bowls, pots and pans and utensils to prevent cross-contamination. Some equipment (e.g. toasters) can be difficult to clean and you may want to consider having a separate one for those family members with food allergies.
Use a sponge, scouring pad, or dish rag that has not come into contact with the allergen. Rinse and dry thoroughly with a clean towel. Avoid just wiping down a knife or common utensil with a rag after touching an allergen (a common practice at sandwich shops).
Run contaminated pots, pans, and utensils through a normal dishwasher cycle or wash them by hand with hot, soapy water and scrub the surfaces thoroughly. Use a sponge, scouring pad, or dish rag that has not come into contact with the allergen. Rinse and dry thoroughly with a clean towel.
It is a common myth that you can have a severe reaction from simply touching something without eating the food. Many studies have shown that if you wash your hands well with soap and water, as well as thoroughly clean the surface with detergent, you can effectively remove the allergen.
