Because if your EGT (in-cylinder temperature) gets too hot, you can melt pistons, crack heads, destroy turbos, and create otherwise serious havoc within and upon your expensive diesel engine. A diesel needs a certain amount of heat to run, but extremely high EGT's should definitely be avoided.
For towing, we'd say 1,200 degrees is a safe number, with occasional spikes of up to 1,400 degrees when climbing grades being an acceptable risk. The concept of EGT is analogous to putting something in the oven. You can put your hand in a hot oven for a second or two, and nothing will happen.
As we pointed out earlier, high EGTs are the result of too much fuel for the available air. If you see EGTs climbing over 1300º F., the fastest way to reduce the amount of fuel going to the engine is to back off the accelerator pedal. Another possible solution is to downshift if your speed permits it.
Generally speaking, the lower your EGT, the better. At Manta Performance, we recommend that your EGT stay under 550°C (as measured at the turbo outlet) to assure your engine's safety. What happens when your EGT gets too high? Nothing good!
Diesel engine exhaust gases vary with speed and load. High loads and high speeds result in the highest temperatures. Generally, temperatures of 500–700°C (932–1293°F) are produced in the exhaust gases from diesel-cycle engines at 100% load to 200–300°C (392–572°F) with no load.
Your Ford Superduty (6.7L) has 4 EGT sensors in the exhaust. Normal driving you are right, will be around 500° Towing I often see temps up in the 800° range. When Active Regen takes place I will see exhaust temps ( especially on the #4 sensor) in the 1100-1200° range.

Based on our own experience in the sled pulling and drag racing world, we can definitely say that any engine running at 1,800 to 2,000 degrees EGT for more than a second or two should be rebuilt every season and may incur turbocharger, cylinder head, or piston damage during the season.
Best DPI setting You do want to avoid playing at too high of a DPI, anything past 12000 is likely excessive, but more importantly, some sensors at this DPI accelerate and emulate the dots per inch, causing inconsistencies, it's not a true raw DPI.
